Here is a recipe we like to share from our Year 2 Diploma student’s stint in the kitchen. Great lunch menus and over 300 guest, well done team

Ciabatta Bread

1.5 cups tap water

1 tbsp olive oil

1.5 tsp salt

3.25 cups flour

1 tsp sugar

1.5 tsp dried yeast

Method

Place ingredients into the bowl of a bread machine. Select the dough cycle and start.

Dough will be quite sticky and wet once cycle is completed, place dough on a generously floured board, cover with a large bowl or greased plastic wrap and rest for 15 minutes. Lightly flour baking sheets or line them with parchment paper, using a sharp knife, divide dough into 2 pieces and form each into a oval. Place loaves on prepared sheets and dust lightly with flour. Cover and let rise in a warm place for about 45minutes. Preheat the oven to 220° C . Spray water on to the base of the oven and place loves immediately in the oven on the middle rack. Bake until golden brown 25-30 minutes.
